Crispy Air fry Nan Ru (Fermented Beancurd) Fried Wings 南如炸鸡翅

I love fried chicken wings! And this recipe uses Air Fryer for a healthier, less oily chickens wings. Plus, I do not need to armour myself from the oil splattering.


Crispy Air fry Nan Ru (Fermented Beancurd) Fried Wings 南如炸鸡翅 uses red fermented beancurd as the main ingredients to marinate the wings for a ultra flavorful umami-rich chicken wings.

 

Though it’s not deep fried, it is as crispy and delicious as those submerge in hot bubbling oil.


Though this recipe asks for minimum 4 hours of marinating, personally, I think overnight or at most 1 day yield the best result. Anything shorter will not be flavorful enough and if longer, will be overly salty.

Feel Free to deep fry it or even oven-bake it.

Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Marinating the Chicken Wings
Blend all ingredients for the marinade until smooth
Use a large mixing bowl or Ziploc Bag, combine the chicken wings and marinade for the wings' ensure all the wings are evenly coated with the marinade.
Cling wrap the bowl of marinated wings (or just seal the ziploc bag) and chill the marinated wings in the fridge.
Allow the wings to marinate for at least 4 hours or best, overnight.
Just before air frying the wings, add in baking powder and corn flour to the chicken. Massage in the flour and ensure that it's well combined.
Preheat the air fryer @ 200 degree Celsius for at least 5 mins.
After preheating, place the wings into a basket or grill pan
Air fry the wings for 10 mins or until golden brown.
Spray oil over the wings before air frying for a crispier wing

Instructions

Quality Fresh 2 beef fillets ( approximately 14 ounces each )

Quality Olive oil

4 cups Chestnut Mushrooms

1 sprig fresh thyme

4 cups puff pastry

8 slices Parma ham

2 egg yolks

beaten with 1 tbsp water and a pinch of salt

Sea salt and freshly ground black pepper

Beef Wellington

2 tbsp olive oil

7 oz beef trimmings

4 large shallots ( peeled and sliced )

12 black peppercorns

1 bay leaf

1 sprig fresh thyme

Splash of red wine vinegar

3 cups red wine

3 cups beef stock
